Looking for a healthy, delicious and easy breakfast? Idli is one of India's most nutritious fermented foods, packed with probiotics, protein and easily digestible carbohydrates. Whether you prefer a wholesome millet version, the classic traditional recipe or a quick microwave option, these recipes are perfect for busy mornings.
Pair every idli with green chutney or coconut chutney and sambhar for a balanced and satisfying meal.
Millet idlis are rich in fibre, vitamins and minerals. They have a lower glycaemic index than regular rice idlis, making them an excellent choice for people with diabetes, weight loss goals and PCOS.
Wash the millet separately. Wash the urad dal and fenugreek seeds together. Soak both for 4–6 hours. Soak the poha for 15 minutes before grinding.
Grind the urad dal until it becomes light and fluffy. Grind the millet with the soaked poha into a slightly coarse batter.
Combine both batters, add salt and mix well. Allow the batter to ferment overnight (8–10 hours).
Grease the idli moulds, pour in the batter and steam for 10–12 minutes.
Allow the idlis to rest for 2 minutes before removing.
Serve with green chutney or coconut chutney and sambhar.
